Healthy Lamb Mince & Veg

Ingredients 150g lamb mince 2 tbsp olive oil 1 cup broccolini 4 zucchinis 50g tomato paste 1tsp lemon zest 1 tbsp rosemary 1 tsp thyme 1 tsp oregano 1 red onion 2 garlic gloves 2 tsp butter
Directions 1. Place herbs, lamb, butter, red onion and paste in the slow cooker – cook through until tender 2. Boil broccolini until medium soft 3. Grate zucchini and add oil into a fry pan and fry for 1 minute. 4. Lay broccoli and zucchini on a plate and place lamb mix over top. Season with salt and pepper.
